It takes a special cook to grill up that perfect rack of ribs.
Jon Schaeffer was out at Ribfest and found one of the ribber that is right at the top of the grilling world.
Slab "Nat sound" after slab "Nat" after slab of ribs hit the grill waiting to be layered in a homemade sauce that was created well before Bismarck's Ribfest had ever started.
"My grandfather died about 50 years ago and so he helped me develop it and one of the things he always said gotta put a little whiskey in the sauce and a lot in the cook he said I guarantee it'll turn out great every time."
Dallas Green's sauce is only part of the process to creating juicy, crispy ribs. These things have gotten reactions out of people you wouldn't believe. "They're so tender fall off the bone kinda thing. It's hard to believe they're that good. I'm supposed to share these with my wife but I don't think I'm gonna." Dallas "I'll tell ya like I seen one lady she didn't have any teeth but she picked that rib up and she was gonna gum it to death it went fell apart in her mouth she laughed she smiled so big." With the help from his tunes "This here is what ya call country-billy" and 2 cooks Dallas wants to "win that's why I'm here." "I love the people I love cooking ribs that's my drug of life is cooking ribs." With over 200 awards from the local to international level, the finger-licking, sauce covered faces of people are what he truly enjoys. Covered in Barbecue sauce at Ribfest-- Jon Schaeffer- KXNEWS
