Mom and Daughter Open Pasta Company

Posted:

From spicy tomato fettuccine to Cabin Creek Spaghetti one local business is turning North Dakota flour into flavored noodles.
Reporter Sarah Gustin takes you near Sterling for a taste of North Woods Pasta.

Now it's looking good.
This mother daughter duo has been spending a lot of time in this room that was once a bedroom in their Farmhouse near McKenzie.
"Today we are running the Cabin Creek. That's very popular that's basil and onion spaghetti. I did a sweet potato fettuccine that's very popular. The spinach and garlic is good. The Mexican is popular. Sour Cream and onion fusilolli that I do. I do a harvest blend that has a borscht noodle. Sweet potato, Spinach and garlic and sour cream all mixed together. Lots of different things."
The Nolan family purchased the established business from an owner near Minot.
Molly says they've done lots of experimenting during the past three months.
Experimenting with only natural ingredients and North Dakota flour.
"The most challenging thing is probably the science piece of it to get it just right. If you are 10 grams off in one ingredient it messes up the whole recipe, and then if you are a couple degrees off for temperature or percentage of humidity it messes up the whole batch. So that is frustrating when those variables come into play. The thing I like most about it is the freedom and the creativity. "
Molly says it takes roughly 20 minutes to make a batch of pasta...then another 2-3 days to dry it.
While the process is time consuming she says it's one she enjoys.
(Molly Nolan / North Woods Pasta) "I like that I can still be creative. I am doing things all the time. I have a lot of things on the horizon. And I like food. I like to cook and I like to eat, so it's right up our alley."
(Catelin Nolan / North Woods Pasta) "My favorite part is the labeling department. because it's just fun and easy. I don't know if there is anything that I do to make it different, but it helps mom out a lot.
After hitting some local craft shows and Pride of Dakota events Molly says business has been busy.
