It’s FAT Tuesday and a local university took the day for all it’s worth.
Minot State University celebrated Mardi Gras with authentic New Orleans food.
MSU’s Beaver Cafe had fried cat fish, hush puppies and chicken gumbo.
Students and community members were greeted with beads as they walked in to the cafe.
The head chef, who is originally from New Orleans said he was up since 5 this morning getting all the food prepared.
“So what we do every few days or so is we try to interject any cultural events other food events into the dining program this way students get a little bit of break in what their normal routines are for food in the dining hall,” said Head Chef Patrick Friley.
Today is the final day of Mardi Gras.
