Minot’s Ribfest Offers a Flavorful Weekend at the Fairgrounds

The smell of barbecue is in the air in Minot this weekend.

That’s because Minot’s Ribfest begins Friday, June 16 at 11 AM.

(Jon Bigalk/Pitmaster, Just North of Memphis BBQ Team) “We’re going to throw down some really good ribs this weekend.”

Bigalk is from Clearwater Minnesota and his family-owned and operated business is a regular one at Minot’s Ribfest.

They’ll be serving up quite a bit of their famous Memphis-style ribs.

Their recipe originates from Bigalk’s Uncle from, where else, but Memphis Tennessee.

(Bigalk) “As far as the amount of ribs that we’re going to be cooking this weekend, it’s probably going to be well over 1,000 racks of ribs. We can cook about 250 at a time so we’ve always got ribs cooking.”

They’re most known for the Memphis-style ribs, which are dry rub with Just North of Memphis’ signature sauces served on the side.

But that’s not all they’ll have, they’ve got 800 pounds of pork, brisket, and chicken ready to go.

Not to mention, homemade peach bread pudding.
